It’s been ages since I last posted and I’ve made a promise to myself that I’m going to do a blog post at least once a week, otherwise I’m going to be making the same new year’s resolution for 2017! I haven’t been baking or cooking as much as I normally used to. My mum’s been over visiting us and I’ve been a bit spoilt 🙂 not that I’m complaining!
So this is me, back to baking. I made up a batch of vanilla cupcakes and as they were baking away in the oven, I raided the cupboard to see what I could fill it with. I came across a jar of Bonne Maman Caramel Spread that I’d already opened earlier in the week. The spread is quite thick and I was about to thin it down with a bit of milk when I remembered I had Coffee Bailey’s in the cupboard! Why use milk when you can use Bailey’s? So I mixed the two together, filled the cupcakes and finished it off with some coffee buttercream.
It’s super super easy and I’m definitely going to make it again for Christmas 🙂
Ingredients & Method:
2/3 jar of Bonne Maman Caramel Spread
2 capfulls of Bailey’s (I had coffee flavoured but you can use any Whiskey Cream)
Pour the Bailey’s into the jar and mix well. I was able to fill 8 cupcakes with the mixture.
Honestly, this is so easy but so tasty and it’ll work really well in sundaes or warmed up and poured over cold ice-cream. You can even pair it with some pancakes and griddled apples. Or, if you’re feeling particularly devilish, just dig in with a spoon!
